What is a good recipe when using fresh lobster?
Sauté the lobster with shallots and garlic in EVOO and a dab of butter. Deglaze the pan with sherry. Add crushed tomatoes and a little chicken or seafood stock, simmer a few minutes. Stir in cream just to blush the sauce. Then toss it with pasta (pappardelle or fettucini would be lovely!)
