Pepita Pesto Pasta with Roasted Squash
Pesto is one of my absolute favorite sauces. It’s bright green, coats whatever pasta you're putting it on, and when you see it, you know you're in for a ton of flavor. That being said, it can also be a challenge to pair with wine since it’s so flavorful. I really like to go by the old adage, "what grows together, goes together" and pesto is from the coastal area of Italy known as Liguria. If you can find a wine from there, like Bisson Vermentino or Laura Aschero Pigato, they would be ideal matches for this dish. However, those wines can be challenging to find, so I'd recommend going with an aromatic grape, like Sauvignon Blanc, from a warmer area like Chile where you get some tropical notes to balance out the green grassiness (which will complement the herbal pesto well).
