Ringo! and Eggplant Steaks too!!

Rach -- What a day!!!!!!!!!!! I was at the Beatles' concert at Dodger Stadium in 1966. Who knew that it would be their last tour? Of course my favorite was Ringo!

Love the Eggplant Steaks. How appropriate with Ringo, a vegetarian, on the show today. Can't wait to try it. Just LOVE eggplant and new things to do with it.

Just saw the recipe. Sounds great! You can bake the eggplant for 10-12 minutes, turn it over and bake for another 8-10 minutes. It gets crispy and is healthier than frying.

I won't mind try that I like eggplants I grow up eat a lot of eggplant and they are good in the soup,indian curry,

What a show!! Rachael..You outdid yourself today. Ringo will always be timeless and is such a legend. I'm old enough to remember the night the Beatles were introduced on the "Ed Sullivan Show". I didn't get much sleep that night after all of the excitement. Unless I was seeing something that wasn't really there, I saw a slight bit of sadness when he sang and mentioned
George and John..perhaps it was just fatigue or remembering the
good times gone by..memories are powerful things. Please invite him back and perhaps get him to make his pesto?? The eggplant
steaks looked scrumptious!! And..on a different note..The last few
outfits you've had on (prints) looked fabulous..much better than
basic black. Keep on doing what you're doing..it's super!
