I just tried these today for lunch. Oh my word, they are GOOD! I didn't have any nutmeg, so I substituted a little pumpkin pie spice (which has cinnamon, the nutmeg, ginger, etc.) and the sauce turned out fine. I also realized after everyone had eaten theirs, and I was eating mine, that I forgot to add the mustard, but I tell you, they were superb anyway. I even put a little of the bechamel sauce on the plates to dip the sammies in, yum! Do let them cool a little to set before cutting as they were very gooey when hot.
