Before I speak my mind, I just wanna say that I love you Rachael. You are a breath of fresh air and sooo funny! But I have to say the recipes you use on the show are much too fattening. Sure, the EVOO is great but... the cheeses!!... and the butter! I want to know why you would have a show that talks about diet mistakes and then cook up such a high caloric meal? Please don't be mad. I'm just confused. I hope you read this Racheal and reply. Luv'you!

i agree, too many cals. also what about the serving sizes? i am a diabetic if i ate her serving sizes i would be in a lot of trouble! i love rachels food but i am almost afraid to eat any of it.

Rachel just started watching the show, was very interested in Today's Topic about women not being able to lose weight despite diet and exercise. The main reason I have never done any of the recipes seen on the show is because I felt they were too fattening. And I have not been able to lose weight in the past ten years. I have been cooking only low fat foods since 1995. I exercise way more then those women, and eat way less, yet I have not lost weight. I know the exact caloric content of everything I put in my mouth, still no weight loss. Every time I go to a doctor they assume I am like these women, and one doctor an endocrinologist even told me I had to be 'eating in my sleep' he put me on a 'doctor supervised fast' and I gained weight, even with exercise. The only thing I lost on that 'fast' was $1600.
But I love the show and I wish I could make some of those fun recipes, but I would gain too much weight. By the way I am 180 pounds and absolutely miserable.

You can eat anything Rachel makes, just adjust it to your dietary needs.
With the Toga beef tonight, use a thinner cut of meat, feta cheese is very low fat to begin with, and then top your steak with half the feta, and double the spinach. If you really want the crust use one layer of phillo with spray Pam if you must, otherwise just put your steak on top of a cup of the orzo a couple of pine nuts or try barley, it's a great substitute!

You will get the taste of her cooking, without all the calories when you don't want them.
It just takes creativity and a feeling of "Look what I get to eat!" not "look what I don't get to eat."

It's all in your mind, not your stomach!
PS. I quit a 30 yr smoking habit AND lost 30 pounds I gained from having 7 babies.
Mind over matter and keep your servings small for rich foods and add lots and lots of veggies!

First of all, if you have to do that many substitutions it is NOT her recipe...it is yours. All I can say is her fans must have a lot of money. She uses the most expensive cheeses and cuts of meat and thinks everyone an afford it. She doesn't have to worry about it...she makes 16 mil a year and she's not paying for the food on her shows anyway. Her recipes are NOT healhful..they are full of fat and calories. Beef tenderloin is very lean but it sells for about 21.00 to 24.00 a lb. This is a math test...so remember, she is aking for 6 to 8 oz. cuts. Multiply that by 4 and see what you come up with. Is that "That's for dinner tonight" at your house...certainly not mine. Maybe on special occasion I do buy beef tenderloin, but when I do it will be simply grilled to perfection with a little salt and pepper...nothing else and served with a simple salad or grilled asparagus and a baked potato. She doesn't give a flying flip about the cost or fat content in her recipes. When she first started she had simple "make sense" recipes. Now every one has to have a gazilloin ingredients. Sometimes less is more.

My intentions, by no means, are to degrade any one show host...especially, RACHAEL. I just think she as well as some other cooking show hosts can make a difference in this world by not contributing to what plagues this country...obesity. Who doesn't admit to loving the taste of fat. Its what adds that yummy factor to any food. Just look at the ingredients of any packaged or processed food...full of saturated fats, "partially hydrogenated" oils, high fructose corn syrup...monosodium glutemate...etc.Its sickening! I just wish someone like Rachael would use their popularity to speak out against these killer ingredients. And to be a good role model.

Recipes are guidelines not written in stone. If I don't like something, I substitute or omit it altogether. That doesn't make it my recipe. You can buy lean cuts of meat on sale.

As for RR, yeah sometimes her recipes are a bit on the unhealthy side, but that why you go to the gym for 3 hours a day.

I agree with SteamedClams in Seattle. The mind is very powerful. And substitutions are great. Also not everyone is looking to eat SO healthy ALL the time. The RR show has to be creative and cater to all different people. For those that feel her food is too fattening and expensive, maybe you should watch her show for the other things she has to offer.
