Oh, my dear you can stuff mushrooms with almost anything. The trick is to not wash the muchrooms, just wipe them with a damp cloth or they will cook up mushy, I like to use either cottage chees, ricotta or cream cheese and mix in some chopped spinach (if it's frozen, thaw and squeeze out the moisture), add a little bit of crushed red pepper and salt and pepper to taste. Stuff your mushrooms and top them with a little cheese of choice. Stick them in a 400 degree oven until they're browned on top and walla.......they never fail. You could probably sub chopped broccoli or any other veggie. Arugula would be good too. Good luck!
