Cutting corn from the cob

When I was young, I recall going to my grandma's farm and helping her and my aunts with the process of "freezing corn". We'd husk the corn (the kid's job), blanche, then cut the kernels off with a knife. My aunts would bring their angel food cake pan from home and they would all stand around grandma's kitchen table with a cob standing on the tube in the middle of the pan, cutting the corn off and talking about crops, cousins and cookie recipes.
I inherited my mom's angel food cake pan, but a bundt pan works well too.

What a lovely story. I envy you growing up with fresh corn. I'm in an area where everything is imported and tastes like cardboard.Please share more stories so I may drool!!!!!

I have the same memories. That is what we used too!!! It was so much fun, being a little girl and husking. It was not a job then. We also used a electric knife, it went a lot faster.

I cut the corn off and then fry the corn in butter and add sugar until lightly browned.

Growing up in New England, corn season is very short. There never was any corn left on our plates to save. I fondly remember (and still enjoy today) dinners of corn on the cob and homegrown cucumber and tomato slices. I figure if I'm saving calories by eating cukes and tomatoes I can afford to eat more than 2 ears of corn:)
