Hi, Steph here, aka the Crock Pot Lady

crockpotlady
hey all,

I'm here to answer all of your burning (simmering?) Crock-Pot questions as best I can. Are you new to slow-cooking? Is your Crock-Pot collecting dust, and you are looking for inspiration?

Have any family favorite dishes that I should try? (I've got a whole half a year to go here... eek!)

first I have to say how impressed I am that you are taking on this challenge, just not to do the friday night pizza or saturday cookout! I use the crockpot a lot in the winter but not as much lately. My kids often reject the cassorole type food that comes with standard crockpot recipes.
You will be my inspiration to use it more often,it does make more sense in the summer since it doesn't heat up the whole kitchen. The humidity is wicked right now and I just don't want to cook.
I will definitly try some of your recipes!
Thanks!

forgive me for playing around with this message board---I'm still figuring out all the ins and outs.

I haven't seen the show yet, it's not on for another hour here!

Steph! Hi. I have to tell you something really neat: I am a homeschooling mom and on one of my Yahoo Groups, you blog was posted just yesterday! Who would have thought that you'd be on Rachel Ray today.
I want to commend you for creating all these recipes. I am vegan, so I will have to "veganize" most of them. I really appreciate you posting all of these for others to use.

Thanks so much!

Do you have a website or a book for all of your recipes?

Hi Steph! This recipe was given to us by a friend of the family, and since it didn't have an official name, we just call it Dan Chicken after our friend! All you do is place boneless skinless chicken breasts in a crockpot, cover with your favorite Italian dressing, and cook on low for about 8 hours. Then you can shred the chicken with two forks and serve on hard rolls with Provolone cheese. We also use the leftovers (if there ARE any!) on salad greens for a tasty chicken salad. Hope your family enjoys this as much as ours does!

Steph, I have a creckpot recipe that I find impossible to go without. You may already have this but in case you don't......You will need 1 jar of Ragu Spaghetti sauce, frozen meatballs (I buy mine at our local GFS store ). Good Seasons Italian Salad Dressing mix, grated parmesan cheese.
Place spaghetti cauce and meatballs in crock pot (Iusually "rinse"
empty jar out with about 1/2 c water and dump into the crockpot), I sprinkle the salad dressing mix and parmesan cheese (according to your taste) over the sauce and meatbals and then let cook for about 6-8 hours.
You can top your favorite pasta with this or serve it at a party as an appitizer, ENJOY!

crockpotlady
sounds good. Thanks
thank you, JW! I know a few people plug their crockpot in the garage, or out on a porch on hot days.

I have a fast,cheap,easy recipe. You get a piece of foil place a chicken breast (bone in) in the foil sprinkle the chicken with onion soup mix, individualy wrap the chicken and onion soup mix. Place in crock pot and let cook all day. No water is needed. This recipe is awesome. I usually cook a couple extra breasts and use them to shred over a salad the next day. My kids really love this recipe.

I got this recipe for Tamale Pie from my friend, and my family loves it. I've started getting into the crockpot again recently, after only using it for chicken, roast, and potatoes/carrots. I'm excited to check out your site and see if I can find any recipes we like. Here the recipe for Tamale Pie:
* 1 lb. ground beef
* 2 cans kidney beans, drained and rinsed
* 1 (28 oz.) can enchilada sauce
* 1(6.5 oz.) pouch of golden corn muffin and bread mix
* 1/3 c. milk
* 2 Tbsp. butter, melted
* 1 egg
* 1/2 c. grated cheddar cheese
* sour cream
-In a large skillet, brown the ground beef, season with salt and pepper. Put the browned, ground beef in a crock pot along with the kidney beans and enchilada sauce, stir together.
-In a small bowl combine the muffin mix, milk, butter, egg & cheese. Stir until moistened. Spoon over the beef mixture in the crock bot.
-Cover and cook on low setting for 5 to 6 hours or until toothpick inserted in center of corn bred comes out clean. Top individual serving with sour cream.

I hope you like it!

I think it is great what you are doing. I will have to try doing that more. Right now I don't get home till late. But soon, I will be home all the time. I can't wait to check out your recipes. :)

Hey, Crock Pot Lady!

I have a really easy recipe that, although some people say it sounds yucky, my family loves.

Ingredients:
4 or 5 porkchops, browned
1 can cream of chicken or cream of mushroom soup
1/2 bottle bar-b-q sauce (any kind will do--I like KC Masterpiece, Mesquite)
1 can mushroom bits and pieces, drained

Dump it all together in crockpot and cook until pork chops are done (usually 5-6 hours) I serve over rice or noodles, but have also used potatoes (husband prefers). Sometimes I mix in a can of corn, drained.

The crockpots today are they "hotter" than the older ones?(like cook the food faster, etc) My friend had used hers and an older one and she had cook the same thing in it and hers was hotter and cooked it better.

ooh, I think I'm figuring out this message board! I don't know if the newer crockpots are actually "hotter" than the old ones, but I do believe they bring food up to the desired temperature faster. Which maybe does mean that they are hotter? Just get hot faster?

Yup, using the crock in the heat is great---you can really save $$ on energy because you don't heat up the whole house, and then need to cool it off with the air conditioning.

Hi, I had seen you today on RR. I love using the crockpot too. I try to use it at least once a week.(my original crockpot recently died,had if for at least 20+ yrs)I have another one, bought it at a yard sale for 5.00, like brand new.
I have a few questions--The crockpots today are they "hotter" than the older ones?(like cook the food faster, etc) My friend had used hers and an older one and she had cook the same thing in it and hers was hotter and cooked it better.
I have a couple tips~~Since it gets really hot here in the south, my husband suggested to use my crockpot more and to set it out in the garage(which is a room),set it on top of the washer machine to cook.(this room is right off of the kitchen)So it works just great! It doesnt heat up my kitchen and having the air conditoner run more to cool the house down.
I have tried using recipes from a cookbook called "Fix It And Forget It",(There are 3 out-regular one, light, and entertaining) it is a favorite of mine, I like how it is laid out inside.I had bought it at Walmart. I hope this helps someone out.

Hi, saw you today and you were great. I have a Chili-Beef soft taco recipe that my family loves. You need 2 (16oz) jars of salsa, 2 Tbsp. cider vinegar, 5 tsp. chili powder, 1 1/2 lb. beef chuck pot roast. Reserve 1 cup salsa. Mix remaining ingredients and place in crock pot. Spoon the sauce over the meat. Cook on low 10 to 12 hours. Shred meat with 2 forks and serve with flour tortillas and your favorite toppings (sour cream, cheese, lettuce, avocado and reserved salsa). I am actually making this for dinner today!

Hi!
I think I have a crock pot,,,,, back of the cupboard somewhere. Don't think I have ever used it!

I have been getting into cooking more and more and I think I will dig it out and start trying some dishes!

Thanks for the new (reviving an old?) idea!

I will be visiting your site soon!

Nice segment on the show today!

Heres a favorite of me and my husbands hope you like it as much as we do!
1 lb chicken breast, cut in 1 inch cubes
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups chicken broth (organic or homemade)
1 teaspoon Worcestershire sauce
1 clove garlic, minced
1 bay leaf
1/2 teaspoon paprika
2 carrots, sliced
2 russet potatoes or 4 yukon gold potatoes, diced
1 onion, chopped
2 stalks celery, sliced
1 cup green beans (optional- I omitted)

1. Place cut up chicken in crockpot.
2. Mix flour, salt, pepper, and paprika in a small bowl, and pour over chicken; stir to coat chicken with flour.
3. Add remaining ingredients (except green beans) and mix well.
4. Cover and cook on low for 8-10 hours, or high 4-5 hours.
5. Add green beans 1 hour before serving.

Note: I think next time I make this I might thicken the sauce by adding cornstarch in a little water about an hour before serving, because I like my stew really thick!

Steph,
First I have to say congrats on sticking with this. I found your website several weeks ago, and have it saved in my favorites. I saw you on Rachel's show today, you were great (maybe Food Channel will offer you your own show "Cooking With The CrockPot Lady". I have been collecting recipes for the crockpot, as we are going to be fulltime RVers soon, and the crock pot will work out as the cheaper and cooler way to cook. I intend to use it for most meals.
My question:My DH loves the Zatrain rice mixes.I would like to make it in the crock pot. If you are not familiar with them they are rice and spices in a box, bring to boil and simmer for 25 min. Do you think this can be done in the crock pot and how long do you think it should cook?
Thank you in advance for your help.
Janice (impressed with your dedication)

(I have 2 tested recipes I will post soon on your site)

crockpotlady
Hi Jan,

The Crock-Pot is a great thing to take in an RV; what a great idea!

I have had Zatarain's before, and do think that it will cook nicely for you in a slow-cooker. Put in as much water as the package recommends, and stir in the rice and seasoning packet. Then cover and cook. I'm thinking it will probably take about 90 minutes to 2 hours on high.
http://crockpot365.blogspot.com/2008/03/you-can-use-your-crockpot-as-rice.html

I cooked rice in the crockpot earlier in the year. It worked well!

ps, one of my total dreams is to take the kids out of school and RV for a year and visit all the states. I LOVE the idea of taking along a Crock-Pot!
