Moist Turkey

banana_jm23
This is my first year making Thanksgiving dinner on my own. I have asked various people of how to keep the turkey moist and I get a different story. So can anyone suggest anything?

Brining is the answer. Rachael has a number of recipes that are excellent. You must get it in the brine by tomorrow afternoon tho. Simple and easy is always 1 Cup sugar to 1 Cup KOSHER salt to 3-4 gallons of h2o. Let it soak over night in fridge or a cooler (make sure you take out the package of giblets inside before you soak). Dry it off, give a little lube with EVOO and proceed as you wish.

Can I put my turkey into brine if it's not completely thawed? I underestimated my thaw time!

I'm not 100% sure, but it seems to me that process would help finish up the thawing process. Depends on how frozen your bird still is. Good Luck and Happy Thanksgiving.

Cook it breast side down.

Unfortunately our turkey got ruined because of the recipe I followed from the Thanksgiving All Star show! On the website it showed Ming's recipe as 5 gallons water, 10 cups sugar and 10 cups salt... The 10 cups seemed a little much to me, but that is what I got from the website... I'm wondering if that was a misprint??? It was sooooo salty... It was the worst turkey I have ever had in my life.

I find that a rule of thumb is to always cut back on salt! I soaked my turkey in the brine after watching the Thanksgiving All-Star show, but I did cut back on the salt and it turned out great, we also deep fried the turkey and it was the most moist turkey ever..

Low salt brining doesn't work.

The ratio is 1 cup kosher salt or 1/2 cup table salt and 1/2 cup brown sugar to 1 gallon of water.

I was told never brine a self basting turkey. Found this out after a 12 hour soaking a Butterball turkey. SIL heard it on the radio. Brining will make it too salty. I took it out of the brine immediately , rinsed it well, tasted Ok. Just didn't want to take the chance. I wish things like that would be made clear. Rita
