Cast Iron

mclm
I need advice. I have asked this question several times ,with no response! I often cook in cast iron on an old cast iron stove. I never put tomatoes, potatoes or anything acidic, because, it reacts with the pan. Paula Deen just put sauerkraut in cast iron!!!! I have seen other cooks make chili in cast iron!!! Am I nuts or do these ingredients react to the iron leaving a bad taste? My pans are very well seasoned, in fact, some are my grandmothers.

We cook all kinds of things in our cast iron pots and have never had a problem with bad taste or any other problem with it. My husband will not cook his spaghetti sauce in anything but his cast iron pan.

Possibly the pans are too old ???? remember Paula's pans as are Rachael's are all new maybe after so many years the different flavors are reacting??? I always see all kinds of chillis stews sauces etc. being cooked in cast iron, they are good heavy pans made to take all the heavier foods, so could be you need to replace the pans.

I never thought about them as being too old, that's a thought, thanks. Several of them are so well seasoned they are perfectly non-stick!

first of all congrads that they are so well seasoned that they are non stick!!! those are awesome... tomatoes and acidic foods react with aluminum (potatoes are not acidic).
and your pans can never be too old unless they crack and break (just heard of this recently)!!!
so cherish your beautiful pans and they are healthy too...they leach a small about iron and that is great for your blood!!!!
enjoy!!!

I didn't know cast iron couldn't be old like other pans so guess that's not it,maybe it is the iron leaking in then I have never cooked with cast iron so you learn something new everyday!!!!It is nice that you have them perfectly seasoned that takes awhile I have heard, now you will have to see if this bothers you alot perhaps other people on this board have the same problems or know what to do about it. I agree though it is nice to have the older pans in such good shape!!!

I cook all kinds of things in my cast iron. I have never been told not to cook tomotoes or potatoes or any other acidic foods in it. It is the only pan I fry potatoes in. Makes great cornbread also.
