Richard Blais' Pulled Turkey BBQ Sammies with Brussels Sprout Slaw

INGREDIENTS
  • For the Brussels Sprouts Slaw:

  • 1/3 cup Hampton Creek mayonnaise

  • 2 tablespoons cider vinegar

  • 1 tablespoon sugar

  • 1/2 tablespoon yellow mustard

  • 1/3 cup small diced apple

  • 2 tablespoon sliced scallion

  • 1/2 teaspoon turmeric

  • 1 cup sliced leftover cooked Brussels sprouts

  • 2 cups chopped turkey

  • 1 1/2 cups Hampton Creek mayonnaise

  • 1/4 cup water

  • 1/4 cup white wine vinegar

  • 1 tablespoon coarsely ground black pepper

  • 1 tablespoon Creole mustard

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 2 tablespoon minced onion

  • 3 garlic cloves, minced

  • 2 teaspoons prepared horseradish

PREPARATION

For the slaw, mix dressing ingredients and fold in sliced Brussels sprouts. 

Using a smoking gun, cold smoke the turkey for a few minutes. Char the turkey on a griddle pan or cast iron. Mix remaining ingredients and add turkey. Toss and serve on Texas toast or soft rolls with slaw alongside.
