Falafel Waffle

serves 4

INGREDIENTS
    1 10-ounce box/bag falafel mix, around 1 3/4 cup 
    1 3/4 cup water
    1/2 cup chickpeas, chopped 
    1/2 cup parsley chopped
    1 tablespoon canola oil, plus more for brushing iron
    Salt and pepper

    For the Tahini Sauce:
    1/4 cup tahini
    1 garlic clove, pasted
    Juice of 1 lemon
    A few tablespoons of warm water
    Salt and pepper 

    Optional toppings:
    Chopped tomatoes
    Shredded Romaine 
    Chopped pepperoncini
    Red onion, sliced
    Parsley
PREPARATION

Set waffle iron to medium-high.

In a medium bowl, mix together falafel mix, water, chickpeas, oil and parsley. Season with salt and pepper, and let stand for 15 minutes.

Evenly pour the falafel mix over the waffle maker. Close the waffle maker and cook 5 minutes.

In a medium bowl, mix together tahini, garlic and lemon. Pour in a few dashes of water until the mixture loosens a bit. Season with salt and pepper. 

Remove waffles from the waffle iron and serve with tahini sauce and as many toppings as you’d like.
