Stephanie Izard's Infused Vinegar

INGREDIENTS
  • 1 cup of hot malt vinegar
  • A few sprigs fresh tarragon
  • 1 cinnamon stick
  • 1 or 2 Thai chilis
  • 1/2 tablespoon black peppercorns
  • 1 garlic clove, smashed
PREPARATION

In a French press coffee maker, pour vinegar over remaining ingredients. Let sit until cool then press down and pour over salads or whatever else!
