Ingredients

  • 2 English muffins, split and toasted
  • 1 cup salsa
  • 1 cup shredded Mexican blend cheese
  • Hot sauce (optional)
  • Juice of 1 lime
  • Avocado, sliced
  • Salt and pepper

Yield

Serves: 4 pizzas

Preparation

Preheat the broiler to high.

Place muffins on a sheet tray cut-side up. Top each muffin with 1/4 cup of salsa, 1/4 cup of cheese and a dash of hot sauce.


Place under the broiler for just a minute or two until the top of the pizzas are bubbly and brown.

Squeeze the lime over the avocado and toss with salt and pepper.

Remove the English muffin pizzas from the oven and top with avocado and a few more dashes of hot sauce.
