Ingredients

  • 2 eggs
  • 2 cups store-bought pancake mix
  • 1 cup milk
  • Butter, for cooking

Preparation

Heat griddle to a medium heat.

Separate the egg whites from the yolks.


In a large bowl, mix the pancake mix with milk and egg yolks. Set aside.

In another large bowl, whip the egg whites with a whisk or hand mixer until the whites form soft peaks.

Using a large spatula, fold the egg whites into the pancake mix.

Place a small pat of butter on the griddle. Once melted, ladle about 1/4 cup of pancake batter onto the griddle. Cook for 1-2 minutes per side.
