Pnina Peled's Antipasti Skewers
When the Executive Chef at Memorial Sloan Kettering comes by the studio, she brings some of the foods featured on her menu!
Ingredients
- 12 bamboo skewers – 6” long
- 24 Ciliegine balls (fresh mozzarella balls the side of cherry tomatoes) (you can also substitute with cubes of provolone cheese)
- 24 Cherry or Grape Tomatoes
- 2 tablespoon extra virgin olive oil
- 5 leaves of fresh basil – sliced thin (chifonade)
- Pinch of salt
Yields: 12 skewers
Preparation
In a bowl, toss the mozzarella balls, cherry tomatoes, one tablespoon of olive oil salt and basil together.
Thread the mozzarella and cherry tomatoes alternately onto skewers. Each skewer should contain two tomatoes and two mozzarella balls.
Transfer the skewers to a decorative plate and drizzle with the other tablespoon of olive oil. Serve.
