Healthy Tortilla Ice Cream Bowls

Using frozen yogurt or sorbet keeps this dessert figure-friendly.

Ingredients

  • 6 8-inch flour tortillas
  • Cooking spray
  • 1 pint vanilla frozen yogurt
  • 3-4 tablespoons honey, drizzled straight out of the honey bear
  • 1 tablespoon cinnamon
  • 1/4 cup peanuts, roughly chopped

Yields: 4 servings


Preparation

Preheat oven to 375°F.

Step

Wrap tortillas in a damp towel and microwave for 10-15 seconds. Spray the flour tortillas on both sides with non-flavored cooking spray and gently push them into a jumbo muffin tin to form a cup shape. Make a couple of extras so you can use the nicest ones. Bake for about 10-12 minutes or until they are golden brown and hold their shape.

(For a less healthy option, brush the tortillas with butter instead of cooking spray and sprinkle with the cinnamon before baking.)

Place a scoop of your favorite frozen yogurt or sorbet in a tortilla bowl and drizzle with honey. Give a generous dust of cinnamon over the top and finish with some chopped peanuts.
