Mexican Deep-Dish Pan Pizza

A south-of-the-border twist on an old standard.

Ingredients

  • 2 8 1/2-ounce boxes corn muffin mix, such as Jiffy brand
  • 2 eggs
  • 4 tablespoons butter, melted (1/2 stick)
  • 1 1/2 cups whole milk
  • Extra-virgin olive oil (EVOO) or vegetable oil (1 turn of the pan)
  • Topping:
  • 1 tablespoon extra-virgin olive oil (EVOO) or vegetable oil, 1 turn of the pan
  • 1 pound ground chicken
  • 1 small yellow onion, finely chopped
  • 1 medium zucchini, chopped
  • 1/2 red bell pepper, chopped
  • 1 jalapeño pepper, chopped
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 cup mild to medium taco sauce
  • Salt, to taste
  • 2 1/2 cups (one 10 ounce bag) shredded cheddar or jack cheese
  • 2 small vine-ripened tomatoes, seeded and diced
  • 2 tablespoons sliced green olives (salad olives), drained
