Pesto-Mozzarella Party Roll-Ups

This party-starter only has three ingredients.

Ingredients

  • 8 slices air-dried beef, such as prosciutto or speck
  • 1/2 cup store-bought pesto
  • 1/2 ball fresh mozzarella, cut into chunks

Yields: 4 appetizer servings


Preparation

Cut the slices of meat in half lengthwise. You want them to be roughly an inch wide, so if they’re really big, cut them in thirds – just eyeball it, they don’t need to be exact.

Spread some pesto down the center of each strip. Place a mozzarella chunk at the end of each strip and roll up the cheese inside the meat. Serve the roll-ups cold or at room temperature with toothpicks.
