Place pan or “Barbeclette” on medium or indirect heat. Add garlic, olive oil, paprika, cumin, a pinch of salt and a grind or two of pepper. Using the paddle or a spatula constantly stir the garlic so it doesn’t brown, but becomes tender and fragrant, about 3-4 minutes. Add cheeses and allow to melt a bit before stirring to combine. Serve warm.
