Tomato-Lime Salsa
To be served with Rachael's Fried Fish Tacos!
Ingredients
- 1 red chile pepper, such as Fresno, seeded and finely chopped
- 1 green hot chile pepper, such as Serrano or jalapeno, seeded and finely chopped
- 1 medium red onion, finely chopped
- 3 to 4 ripe tomatoes, seeded and chopped (2 cups)
- 2 limes
- Salt, to taste
- A generous handful of cilantro, finely chopped, about 1/4 cup
- A small handful of mint, very finely chopped, a couple of tablespoons
Yields: Makes 2 1/2 cups
Preparation
Combine ingredients using zest of 1 lime and juice of 2, adjust the salt to your taste.
