Veggie Mac 'n' Cheese Casserole
A great way to get your kids to eat their veggies.
Ingredients
- 1 pound corkscrew-shaped pasta
- Salt
- 1/2 pound center-cut bacon, chopped into 1-inch pieces
- 2 tablespoons extra-virgin olive oil (EVOO), divided
- 1 medium onion, finely chopped
- 2 tablespoons all-purpose flour
- 1/2 cup chicken broth
- 2 cups milk
- 2 cups sharp, yellow cheddar cheese, shredded and divided
- 2 cups jalapeño jack cheese, shredded and divided
- 1 rounded tablespoon spicy mustard
- 1 red bell pepper, chopped
- 2 medium zucchini, sliced into half moons
- 1 box frozen peas
- Pepper
