White Bean Salad
From the White House Cookbook.
Ingredients
- 1 cup small white beans (such as cannellini)
- 1/4 cup extra-virgin olive oil
- 1/2 teaspoon lemon zest
- 1/2 teaspoon honey
- 1 tablespoon shallot, finely chopped
- 1 cup snow peas
- 1/2 bunch chives, chopped
- 5 mild radishes (such as lady slipper), thinly sliced
- 3 tablespoons basil, chopped
Yields:
Preparation
Drain and rinse beans. Combine olive oil, lemon zest, lemon juice, honey and shallots to make a vinaigrette. Blanch snow peas, drain and thinly slice. Mix the cooled snow peas with the drained beans, chives, radishes and basil then toss with vinaigrette.
