Ingredients

  • 1 head overcooked broccoli, trimmed and cut into florets
  • 1 to 2 tablespoons olive oil
  • Salt and pepper
  • 1/2 to 1 cup breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 to 3/4 cup chicken broth

Preparation

Preheat oven to 425F.

Put about 1 cup or so of overcooked florets into a shallow baking or gratin pan. Finely chop the remaining broccoli in a food processor while adding chicken broth and olive oil. Season with salt and pepper, add to the florets in the pan and stir to combine. Top with breadcrumbs and cheese, and bake until heated through and bubbly, about 15 to 20 minutes.
