Ingredients

  • 1 whole head garlic
  • Extra-virgin olive oil (EVOO), for drizzling
  • Salt and pepper
  • 1/2 recipe Homemade Mayo or 1 cup store-bought mayo

Preparation

Preheat oven to 400˚F.

Cut end off garlic bulb, exposing the tops of the cloves. Place on a piece of foil and drizzle with EVOO, salt and pepper. Wrap garlic up in the foil and roast 45-50 minutes. Let cool then squish out the garlic cloves from the skins. Reserve.

Stir roasted garlic cloves into the mayo. Chill until ready to use.
