Shredded mozzarella cheese
Egg wash egg yolk mixed with a drop of water
Roll the 2oz dough ball into a round disc. Sprinkle with olive oil. Add a tablespoon of Ricotta Cheese and a tablespoon of blanched broccoli flowers to the center, topped with approximately 1 teaspoon of grated mozzarella cheese. Fold the dough in half, to create a have moon shape. Press down the edges to ensure the dough is sealed and the filling remains inside. Repeat these steps with additional calzones. Brush the top of the calzones with the egg yolk mix and bake for approximately 10 minutes at 425F, or until golden in color.
