- 1 large or 2 medium bundles black kale, dinosaur kale or Tuscan kale, cleaned and stemmed, leaves very coarsely chopped
- EVOO Extra Virgin Olive Oil, for drizzling
- Salt and pepper
- Freshly grated nutmeg
Preheat broiler to high. Place oven rack in upper third of oven. Set a cooling rack over a baking sheet and arrange half the kale on it. Drizzle the greens with EVOO and season with salt, pepper, and a little nutmeg.
Broil the greens until crispy at edges, 3-4 minutes. Remove to a platter and repeat with the remaining greens.
Top greens with Italian Chicken Drummers or serve as a simple and nutritious side to any meal.
