Makes about 2 cups of whipped cream

- 1 cup cold heavy cream
- 3 tablespoons maple syrup
- 1 teaspoon ground cinnamon
In a stand mixer fitted with a whip attachment, or with a hand-held mixer, whip together all of the ingredients until the cream is airy and holds a soft peak (be careful not to beat it too much, it should be soft & silky).
Refrigerate and serve cold.
