Pesto-Mozzarella Party Roll-Ups

INGREDIENTS
  • 8 slices air-dried beef, such as prosciutto or speck
  • 1/2 cup store-bought pesto
  • 1/2 ball fresh mozzarella, cut into chunks
PREPARATION

Cut the slices of meat in half lengthwise. You want them to be roughly an inch wide, so if theyre really big, cut them in thirds just eyeball it, they dont need to be exact.

Spread some pesto down the center of each strip. Place a mozzarella chunk at the end of each strip and roll up the cheese inside the meat. Serve the roll-ups cold or at room temperature with toothpicks.
