Ingredients

  • 1 1/2 cups shredded red cabbage
  • 1 1/2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 2 scallions, thinly sliced (both white and green parts)
  • 2 tablespoons white wine vinegar
  • 2 tablespoons grainy mustard
  • 2 tablespoons EVOO Extra Virgin Olive Oil
  • Salt and ground black pepper

Yield

Serves: 4 servings

Preparation

In a large bowl combine the cabbage, carrots and scallion. Drizzle the veggies with the vinegar, mustard, EVOO, salt and pepper, and toss to evenly coat.
