- 3 to 4 plum or vine-ripened tomatoes, seeded and chopped
- 1 small white onion, diced
- 1 jalapeo pepper, seeded and chopped
- 1 to 2 tablespoons cilantro, roughly chopped
- Zest and juice of 1 lime
- Salt and freshly ground black pepper
Combine all ingredients in a small bowl, season with salt and pepper and let sit for 15-20 minutes to let the flavors combine.
Serve with your favorite tortilla chips.
