- 1/4 pound ground beef, preferably grass-fed or organic
- 1 strip of cooked bacon, chopped
- 1 to 2 tablespoons shredded cheddar cheese
- Freshly ground pepper
- 1 ciabatta roll
Divide beef in half and roll into two balls; flatten into patties.
Combine bacon and cheese and place it in the center of one of the two flattened patties. Spread mixture on the meat and leave some space near the edge. Place the other patty on top and crimp edges to cover the mixture.
Grill on medium to high heat (preferably using hickory chips) about four minutes per side, depending on desired doneness. Top with fresh ground pepper and then place on the bun.
