The "Cake Boss" Buddy Valastro makes a quick + easy coconut cake, using box vanilla cake mix and premade frosting to save time.

Ingredients
- 1 box vanilla cake mix
- 1 cup shredded coconut, toasted
- 1 can vanilla frosting
- 1 teaspoon coconut extract
- 2 to 3 cups shaved coconut, for decorating
Yield
Serves: 8-10
Preparation
Prepare cake batter according to instructions. Mix in toasted coconut and bake in two round cake pans. Remove from oven and let cool.
In a medium bowl, mix the frosting with coconut extract.
Frost cake with coconut frosting and decorate with shaved coconut.
