Serves 8-10 Aired January 16, 2014 INGREDIENTS 1 box vanilla cake mix 1 cup shredded coconut, toasted 1 can vanilla frosting 1 teaspoon coconut extract 2 to 3 cups shaved coconut, for decorating PREPARATION Prepare cake batter according to instructions. Mix in toasted coconut and bake in two round cake pans. Remove from oven and let cool. In a medium bowl, mix the frosting with coconut extract. Frost cake with coconut frosting and decorate with shaved coconut.
