No-Bake Energy Bars

  • 2 cups pitted Medjool dates 
  • About 1/2 cup hot water (If dates are not soft soak them overnight in just enough water to cover) 
  • 2 cups organic oats

Pulse water and dates in a food processor to a thick, smooth paste; use a little water to thin if necessary. It should be the consistency of a thick jam. Add the oats and pulse until blended. Press mixture into the bottom of a glass pan to about 1/2-inch thick and chill.

Once chilled and firm, cut and serve.
