Ingredients

  • 1/2 cup golden raisins
  • 2 1/4 cup biscuit mix
  • 1 tablespoon sugar
  • 1 teaspoon baking soda
  • 2 teaspoons caraway seeds
  • 3/4 cup buttermilk
  • Melted butter, for brushing
  • Salted Irish butter, such as Kerrygold, for serving

Preparation

Preheat waffle maker to medium-low heat. 

Place raisins in a small bowl. Cover with hot warm and allow to plump for a few minutes. 

In a large bowl, whisk together biscuit mix, sugar, baking soda and caraway seeds. Add buttermilk and stir to combine. Drain the raisins and dry with a paper towel. Add raisins to the soda bread mix.

Brush the waffle maker with butter and add half of the soda bread mixture into the waffle maker and close shut. Cook for 4-5 minutes or until waffles are golden brown. Repeat with remaining waffles. 

Serve with Irish butter alongside.
