These “pizzas” add a yummy vegetable to your dinner for a meal that is under $10 for a family of 5! These pepper pizzas pair well with whole wheat garlic bread for a secretly healthy meal that everyone in your family will love to eat when it’s finished in 30 minutes.

Ingredients

For the Mini Pepper Pizzas:
  • 1 pound bag of mini yellow, red or orange bell peppers, about 18 mini peppers per bag, about 2-3 inches each
  • 1 cup light spaghetti sauce, such as Prego Light Smart
  • 1 cup shredded Italian blend or mozzarella cheese
  • ¾ cup parmesan cheese, shredded (1/2 cup for pizzas and ¼ cup for garlic bread)
  • 25 slices turkey pepperoni, chopped
  • Salt and pepper for seasoning
For the Easy Cheesy Garlic Bread:
  • 10 slices whole wheat French bread (or 5 whole wheat sub rolls cut into 10 halves)
  • 2 tablespoons butter, softened
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon dried oregano

Yield

Serves: 5 dinner entrees, about 7 pepper pizzas and 2 slices of garlic bread

Preparation

Adjust your oven racks so that one rack is in the middle of your oven and another is about 4 inches away from your broiler. Preheat your oven to 400 degrees and coat a large rimmed baking sheet lightly with olive oil spray. Wash the peppers and cut each one in half lengthwise. Remove and discard the seeds and stems. Lay the peppers skin side down in an even layer on the baking sheet. Spoon the spaghetti sauce inside each pepper. Sprinkle the Italian and parmesan cheeses on top of the sauce evenly among all of the peppers. Top each with a pinch of chopped turkey pepperoni. Season the pizzas lightly with salt and pepper. Bake on the center oven rack for about 12-13 minutes or until the cheese is fully melted and begins to brown and bubble. Remove from the oven to cool. 
 
As your pepper pizzas bake, prepare your garlic bread. Lay the bread slices on a large rimmed baking sheet. Spread a small amount of the butter over each piece of bread. Combine the garlic powder, basil, parsley and oregano in a small bowl. Sprinkle the herb mixture evenly over the buttered garlic bread. Season each piece with salt and pepper and top with the remaining ¼ cup of parmesan cheese. 
 
After the pepper pizzas are done baking, switch the oven to the high broil setting. Add the pan of prepared garlic bread to the oven and broil for 30 seconds- 1 minute or until the cheese is melted and the bread is toasted. Don’t forget to set your timer! It browns very quickly! Serve hot to your family for a scrumptious, simply and secretly healthy meal!
