Sunny Anderson's Grilled Cheese Plate

INGREDIENTS
  • 1 large wheel of Brie
  • Cooking spray
  • 1 cup Marcona almonds
  • 1 baguette, sliced into rounds
  • 1 cup dried apricots
  • 1 cup dried cherries
  • 1 cup dried cranberries
  • 2 bunches champagne grapes
  • 1 crackers, assorted varieties
  • 1 pint fresh figs, halved
PREPARATION

Preheat a grill. When it is nice and hot, oil a towel and rub grate with the oiled towel.

Spray wheel of brie with cooking spray and place on the grill. Flip when the cheese starts to get soft and grill-marked, about 2 minutes. Brush bread slices with oil and grill until marked, about 1 minute per side.

Spray figs with cooking oil and place them on your grill cut side down, about 1 minute per side.

Assemble the cheese plate by laying grilled cheese rounds on a large platter and filling small bowls with Marcona almonds and dried apricots. Arrange grilled crostini, champagne grapes and crackers around the cheeses and enjoy!
