Ingredients

  • 3 cups coffee (cold brew is awesome here, but regular coffee cooled down will work)
  • 2 cups heavy cream
  • 1/3 cup coffee liqueur, such as Kahlua
  • 1/2 cup sugar
  • 1/2 cup water
  • 3 tablespoons vodka

Serves: 12 pops

Preparation

Spray a 9x5” loaf pan with non-stick spray and line with plastic wrap. Combine coffee, cream, coffee liqueur, sugar, water and vodka together in a large pitcher or bowl. Pour into the loaf pan and freeze until it’s about 40% set, about one hour. Stick popsicle sticks into the loaf pan in two rows of 6 and return to freezer until completely solid, about 4 hours.

When you’re ready to eat these guys, remove the frozen block of delicious from the loaf pan (just lift the plastic wrap out of the pan then peel it off). Using a hot knife (run it under hot water for a minute or so), slice the block into 12 “popsicles”– you’re aiming to get the stick in the center of the block, like, you know… a popsicle.
