Ingredients

  • 2 sticks butter
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup orange colored vanilla chips (seasonal)
  • 36 mini peanut butter cups
  • 72 mini sugar eyes
  • Chocolate icing, for piping legs and sticking eyes

Yield

Serves: 1 dozen cookies

Preparation

Preheat oven to 350°F.
 
For the cookies: In a large bowl, using an immersion blender, cream together butter and both sugars until combined. Add two eggs and vanilla. Once completely combined, add baking soda and salt then add flour a little at a time. Scrape down sides of the bowl and mix one last time before folding in both chips.

 
On a parchment-lined sheet pan, use a cookie dropper to scoop 12 cookies on the sheet. Bake for 7-9 minutes.
 
As soon as the cookies come out of the oven, press a peanut butter cup (top down) into the center of each cookie; let cool. Once cookie is cool, pipe on legs and stick on eyes.
