Celebrity nutritionist Keri Glassman has been helping us nourish our bodies and brains for years. Recipes she's developed to promote brain health include her Overnight Oats, Easy 3-Bean Salad and this simple tomato bruschetta. 

"Tomatoes contain lycopene," she says, "and the same lycopene that is good for prostate health is also fab for preventing dementia and Alzheimer's." A tasty and really simple way to prepare them is to cut them, toss with olive oil, salt and pepper and spoon onto toasted bread slices. Bruschetta is perfect for a snack or appetizer and is a popular party food! 

Ingredients

  • 1 cup cherry tomatoes, quartered
  • 1 teaspoon olive oil
  • Dash of kosher salt and freshly ground black pepper
  • Four ½-inch-thick slices of sourdough bread, halved and toasted

Serves: 2

Preparation

Toss the tomatoes, oil, salt and pepper in a small bowl. Divide tomatoes among toasted sourdough and serve.
