These pumpkin spice waffles with Nutella are perfect for the morning of or after Thanksgiving.

Pro Tip: Making waffle batter with yeast gives them a fluffy consistency. 

Ingredients

  • 2 ½ cups flour
  • 2 tablespoons sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 ½ cups warm water
  • ¼ cup melted butter, plus more for brushing
  • 2 eggs, at room temperature
  • ⅓ cup whole milk
  • Nutella, for spreading

Preparation

In a large bowl, whisk together flour, sugar, pumpkin pie spice, salt and yeast. Add warm water and butter. Using a rubber spatula, mix until combined. Cover the bowl with plastic wrap and refrigerate overnight.

Preheat a waffle iron to medium heat. Remove the batter from the fridge; batter should be bubbly and slightly risen. Add eggs and milk to the batter and whisk to combine. Brush waffle iron with melted butter and pour some batter into the waffle maker. Cook according to waffle iron instructions until crisp and brown. 

To serve, spread waffles with Nutella.
