Football is back and we’re tackling tailgating season! Chef Richard Blais crashes the L.A. Rams tailgate and throws down tasty riffs on the classic hot dog—like this deliciously inventive take inspired by the classic Hawaiian snack of SPAM musubi.

Ingredients

  • 1/4 cup sushi rice
  • Nori strips, about 1/4-inch wide, cut from 1 sheet
  • 1 hot dog, split lengthwise
  • 1 tablespoon Kewpie (Japanese-style) mayonnaise
  • 2 teaspoons store-bought Japanese eel sauce

Yield

Serves: 1

Preparation

Cook sushi rice according to package instructions.  

Grill or pan-sear split hot dog.

Line a small square dish or mold with plastic wrap. Press cooked rice into the dish to form a square. Remove rice from the mold using the plastic wrap. Cut square into halves to make a rectangle. Set a split hot dog on top, then slather with mayonnaise and eel sauce. Wrap with a nori strip and use a little water to seal the edges.
