Chef David Burke Turns Food Into Foam
Whipped cream is usually reserved for dessert, but what if your dinner arrived with a savory lobster-flavored foam on top? "You don't expect certain items to be that light and fluffy!" says chef and restaurant owner David Burke. He is transforming everything from lobster to pepperoni into whipped-up foam to add flavor with fewer calories. "It's a lot lighter to eat!"
Rachael invites him to take over her kitchen for a demonstration and he creates blue cheese, Caesar's salad dressing and garlic and pepperoni foam!
