Pancetta
"Pancetta is an Italian, cured meat that's similar to bacon, except it's not smoked. Go to the deli first. If they don't have a big one they can slice for you, look over in the packaged meat case, where they have the pre-sliced meats. Pancetta is fairly new to the mainstream grocery store scene so they don't always keep a large stock of it. When you do find it, buy a ton and stick the packages in the freezer. It freezes beautifully and then you'll have it for several recipes."
Smoked Paprika
"Smoked sweet paprika is becoming a trendy spice now that's popping up in more and more recipes. If you can't find it anywhere, you can mix cumin or chili powder with some regular sweet paprika for the same sort of smoky effect. It should be available though, either above or below the spice section in little cans instead of the bottles. McCormick has recently added it to their racks so look for it in their regular spice section. Or, you can order it online at Penzey's or Kalustyan's."
Coarse salt
"Coarse salt has many uses. Use it to clean cutting boards and, of course, in your cooking. Look for it in the spice aisle. It's not a high-ticket item; it comes in big boxes and is inexpensive, so they don't put it in the middle of the shelf. They hide it either way low or way high. That's where you're gonna find the salt."
Old Bay Seasoning
"Growing up in New England, it's very common to use Old Bay in anything with seafood. I don't know why they separate Old Bay from the rest of the spices but they have it at the fish counter. It's always at the fish counter, usually on a rack on top of, underneath or near the fish counter."
Grill Seasoning
"Another question I'm asked frequently is where to find the grill seasoning I use for burgers or meats. It's Montreal Steak Seasoning by McCormick. If you've been looking for it under 'S' for steak seasoning, no wonder you can't find it. It's under 'M' for Montreal."
