Next time you're in charge of a fundraising event, make sure you get the most you can for your cause. Rachael passes along a sample menu that'll have you saving your pennies, and then getting big bucks for the food!

For starters, why not host a brunch? Since the main component of a brunch is eggs -- which are cheap -- you can make a good profit.

Frittatas are just as satisfying as omelettes and so much easier to make for a large group of people. Here are some options:

Chorizo-Potato Frittata

BLT Frittata

Cocoa's main component is water -- which makes it so easy and affordable to make!

Add a couple cinnamon sticks, a pinch of cayenne pepper, and it's "Mexican Cocoa" at $2 a cup. Top it with whipped cream, chocolate shavings and a couple of amaretto cookies, and you can charge $2.75!

For a sweet treat, try some Cream Cheese Dolci Ravioli.

Instead of a bowl of fruit salad, let the kids help you assemble some Fruit Sticks. Charge $2 a stick!

Since brunch wouldn't be complete without a cup o' Joe (or several), assemble a Coffee Bar, complete with assorted add-ins like syrups and liqueurs for a little extra flavor.
