It wouldn't be a Fat Tuesday show without a New Orleans-style chef, so Rach invites John Besh to show off some of his best dishes from the Big Easy! Before he gets cooking, John shares the story behind his new restaurant, Luke, in San Antonio, Texas. "The people of Texas really came forth after Hurricane Katrina, they took in just so many people out of New Orleans and South Louisiana as a whole that really needed a helping hand. This was a very hospitable city," John explains. "So, [I] built a lot of friends there after Hurricane Katrina, and so we thought, 'You know what? It feels like home; I've gotta get there!'"
