Rocco joins the Ultimate Tip-Off with tips to help you zest up your food and salvage those meals you might think you've ruined!

Add some zest. Rocco lends a hand in Rachael's kitchen - a Buddha's Hand! "It's an Asian citrus fruit and it smells a lot like lemon," he explains. "But it's got no fruit inside, no juice, no seeds - it's basically a lot of zest, so if you're into lemon zest, this is an all-zest fruit." Rocco adds that the piff (the white part) is not bitter so you can use that as well.

Rescue burning food. "Even the best cooks burn things," Rocco admits, but your meal can often be salvaged! The next time you smell your chili, marinara sauce or soup burning, do not stir it. "That is the wrong thing to do - you just stink up the whole pot of food." Instead, Rocco advises that you pour the contents into a new pot. "Whatever is stuck to the bottom will stay stuck to the bottom - just let that go and throw it away." Double-check that what's in the new pot doesn't smell like what you smelled in the scorched pot and you should be fine.

Salvaging overcooked fish. If you've forgotten about the salmon you had baking and completely burned it, don't make a move for the trash can yet. "Flake the fish apart," Rocco says. "Once it's overcooked it will flake anyway, so let it flake apart and then coat it with something mayonnaise-based or a sauce of some kind, a pesto - something that's got some juiciness to it. Just mix it in and turn it into a fragrant salad!"
