At Fresco Gelateria in New York's East Village, owner Ilias Iliopoulos gave us a behind-the-scenes look at how they make their super-popular mascarpone (Italian cream cheese) flavor.

They create the base for the gelato with milk, milk powder, cream, and sugar. Then, the star ingredient—mascarpone—gets added along with lemon zest and juice, a bit more sugar, and salt. That all gets whirred together, then poured into the ice cream machine.
