When Rach has guests stay overnight, whether she's in her home in Italy or upstate NY, her go-to breakfast is a frittata—and it's a guaranteed crowd-pleaser.  

"Some of the favorite brunches at our place are frittatas made with all of the fresh ingredients from the backyard. So you can just cook up whatever is in the garden and add eggs." 

"But I think everyone's favorite frittata is when you take a skillet, line a pan with good ham...draping it over the sides. I cook a little bit of cabbage or Brussels sprouts or leeks, add eggs and cheese and a little milk. Then, pour it into the pan that's lined with the ham and let that start to set on the stove a bit. Fold the ham in and put it in the oven—and it's a ham-crusted frittata," Rach explains. Yum!
